These granny smith apple muffins are light, fluffy and loaded with bits of fresh apple, pecans and a hint of spice.

 1 ½ cups Canola oil
 2 cups Sugar
 3 Eggs
 1 tsp Baking Soda
 2 tsp Cinnamon
 ½ tsp Nutmeg
 ½ tsp Salt
 3 cups Flour
 4 Apples
 2 tsp Vanilla
 1 cup Pecans

Measure out dry ingredients and set aside. Peel, core, and dice apples, add pecans and vanilla, hold on side. Measure the oil and sugar into a bowl. Add the eggs one at a time and incorporate until a batter is formed. Add in dry ingredients and mix well. Add the apples and mix well again.
Spray a muffin tin with vegetable oil and dust with flour. Shake out excess flour. Weigh out portions at 3 ounces.
Bake at 325 degrees for 25 minutes or until a toothpick comes out dry.

Yields: approximately 18-21 3-ounce muffins
